Greek salad

Greek salad with roast chicken

Greek salads are so versatile as you can have them with or without meat. The feta cheese and olives are filling and add real Mediterranean robust flavours. The Mediterranean diet has the most evidence for health and weight loss. This recipe uses the meat of a simple roast chicken but you can add any leftover meat from beef, lamb to fish.

Serves :    2

INGREDIENTS:

200 mgs roast chicken breast, pulled into pieces

50 gms crumbled fetta cheese

10 cherry tomatoes

100 gms baby spinach

100 gms sliced red capsicum

1/2 sliced red onion

6 Kalamata olives

½ clove crushed garlic

2 tbsp olive oil

3 tbsp lemon juice

 

METHOD:

  1. In a bowl, mix chicken (or other meat) , cheese, onion, spinach, olives, capsicum, and tomatoes.
  2. Mix olive oil, lemon juice and garlic in a screw –top jar and shake well.
  3. Drizzle the dressing over the salad and toss to mix well .
