Zesty Roast Beef

TIME TAKEN: 75 minutes

Serves: 4

Cook extra for lunch the next day

INGREDIENTS:

  • 500 gms of beef rump roast (or lamb, pork or chicken)
  • 1 tbsp Italian spice (mix of oregano and basil)
  • ¼ bunch mint, chopped
  • 1 orange, juiced
  • 1 tbsp honey
  • 2 tbsp red wine vinegar
  • 2 tsp olive oil
  • 2 carrots, cut into small pieces
  • 1 red onion
  • 2 red capsicum
  • 1 garlic clove
  • 1 sweet potato, cut into slices
  • 2 punnets cherry tomatoes

 

METHOD:

  1. Mix all ingredients together and marinade lamb, beef, pork or chicken in fridge for 1 hour or overnight if you have time.
  2. Cook in oven at 190 degrees C for 50 minutes
  3. Surround meat with vegetables. Drizzle both with olive oil.
  4. Let rest in foil for 10 minutes before carving
  5. Serve on bed of vegetables
