Zesty Roast Beef

Cook extra for lunch the next day
INGREDIENTS:
- 500 gms of beef rump roast (or lamb, pork or chicken)
- 1 tbsp Italian spice (mix of oregano and basil)
- ¼ bunch mint, chopped
- 1 orange, juiced
- 1 tbsp honey
- 2 tbsp red wine vinegar
- 2 tsp olive oil
- 2 carrots, cut into small pieces
- 1 red onion
- 2 red capsicum
- 1 garlic clove
- 1 sweet potato, cut into slices
- 2 punnets cherry tomatoes
METHOD:
- Mix all ingredients together and marinade lamb, beef, pork or chicken in fridge for 1 hour or overnight if you have time.
- Cook in oven at 190 degrees C for 50 minutes
- Surround meat with vegetables. Drizzle both with olive oil.
- Let rest in foil for 10 minutes before carving
- Serve on bed of vegetables
