Warming Pork Casserole

Hot Beef Bourguignon with mushrooms and vegetables in a bowlThis is something to prepare in the morning so that you can come home to the aromatic smells it cooking. Such a healthy, nutritious, welcoming feeling! Invest in a slow cooker. They can make easy and healthy meals with little effort.

Time taken :  8 hours or 4 hours (using a slow cooker)

Serves :           4

Make extra to take to lunch tomorrow

INGREDIENTS:

  • 800 gms pork scotch fillet, fat trimmed
  • 1 red onion, cut into wedges
  • 3 carrots, halved lengthways, sliced
  • 2 celery sticks, sliced
  • 1 1/2 cups mushrooms, sliced in half
  • 1 tbsp fresh thyme sprigs
  • 3/4 tsp tumeric (optional for anti-inflammatory properties)
  • 3 tsp cornflour
  • 250ml white wine
  • Cooked brown rice  – 2 cups
  • Green leafy salad with cherry tomatoes

 

METHOD:

  1. Season pork with pepper and place in slow cooker
  2. Place onion, carrot, celery, mushrooms, wine, turmeric (optional) and thyme around pork.
  3. Set slower cooker to cook at 8 hours on slow or 4 hours for quick
