Egg, Avocado and Rye

Time Taken: 10 minutes
Ingredients:
- 2 medium eggs
- 1 ripe avocado
- 2 slices rye bread
- toasted pine nuts (optional)
Method:
- Bring a medium saucepan to boil. Add eggs and boil for 8 minutes
- Halve the avocado, scoop out into small pieces
- When boiled, run under cold water for 2 minutes before shelling
- Spread avocado on rye bread. Cut the eggs in half and place on top of avocado
- Serve immediately with black pepper and a sprinkle of pine nuts if desired
