Egg, Avocado and Rye

Time Taken: 10 minutes


  • 2 medium eggs
  • 1 ripe avocado
  • 2 slices rye bread
  • toasted pine nuts (optional)


  1. Bring a medium saucepan to boil. Add eggs and boil for 8 minutes
  2. Halve the avocado, scoop out into small pieces
  3. When boiled, run under cold water for 2 minutes before shelling
  4. Spread avocado on rye bread. Cut the eggs in half and place on top of avocado
  5. Serve immediately with black pepper and a sprinkle of pine nuts if desired
