Avocado and Chickpea Mash

Serves: 4 serves

(store in  airtight container for 1 week)

Ingredients

1 can of chickpeas

1 avocado

1 tbsp lemon juice

1-2 pieces dark rye bread

4 cherry tomatoes – halved

Method:

In a large bowl, mash the chickpea until smooth or use a small blender

Add in avocado and lemon and blend until smooth

For flavouring , add salt and pepper as needed

Spread over 1-2 pieces of dark rye bread and decorate with cherry tomatoes and roasted pine nuts (optional)
