Zesty Chicken Salad

INGREDIENTS:
100gm leftover cooked or roast chicken. if using leftover chicken drumsticks, peel the meat off the bone
¼ finely shredded purple cabbage
1/2 cup rocket leaves
1/4 cup alfalfa sprouts
1/4 cup shredded carrot
1 tbsp mustard
1 lemon, juiced
1 tbsp olive oil
Spring onion for garnish
Salt and pepper
METHOD:
1 Mix the cabbage, lettuce, sprouts and carrots in a bowl
2 Whisk together the mustard, lemon juice, and olive oil and add to the salad, tossing to combine. Add salt and pepper.
3 Serve with the chicken on top and garnish with spring onion
