Thai Grilled Beef Salad

Serves : 4
INGREDIENTS:
- 600gm rump steak
- 2 tsp olive oil
- 80ml soy sauce
- 1 cup fresh mint leaves
- 1 cup fresh coriander leaves
- ½ cup basil leaves
- 2 sliced red onions
- 250gm cherry tomatoes, halved
- 400gm cucumber, sliced
- 100gm spinach or lettuce
SWEET AND SOUR DRESSING:
- 125ml lime juice
- 60ml fish sauce
- 1 tsp sugar
- 2 sliced fresh red chillies (optional)
METHOD:
- Brush oil and kechap manis onto beef in a dish , cover and refrigerate for 30mins.
- Toss herbs, onion, shallot, tomato and cucumber in a bowl, mixing them.
SWEET AND SOUR DRESSING:
- Put ingredients in a screw-top jar and shake well.
- Grill beef on a heated oiled grill till charred slightly.
- Stand and cover for 10mins.
- In a bowl, put the beef, lime leaves and mesclun, together with the herb mixture and dressing.
- Toss to combine.
