Sticky Pork Meatballs

Chicken Meatballs with glazeTime taken: 25 minutes

Serves: 4

INGREDIENTS:

  • 2 cups brown rice, cooked
  • 1 bunch spring onion
  • 4 cloves garlic
  • 250 gms snow peas
  • 2 carrots
  • 2 red chillies (optional)
  • 500gms pork mince
  • 4 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil

METHOD:

  1. Cook rice
  2. Finely slice the spring onion. Crush the garlic
  3. Trim the ends of the snow peas and cut the carrots into thin slices
  4. In a bowl, combine the pork mince, spring onion, ½ of the garlic, 2 tbsp soy sauce and honey.
  5. Shape into small meat balls
  6. In a wok, add 1 tbsp of olive oil. Saute the carrots and snow peas.
  7. In medium frying pan, add 2 tbsp of olive oil, and cook the meatballs for 8 minutes.
  8. Serve the meatballs with  the vegetable mix.
