Mediterranean eggs

Mediterranean eggs

 

SERVES: 2

TIME TAKEN: 20 minutes

INGREDIENTS:

  • 1/2 large red onion, halved and sliced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/3 punnet cherry tomatoes, sliced in half
  • 1/3 cup mushrooms, chopped
  • 3 large eggs
  • 1 sprig parsley
  • Salt and pepper (optional)

METHOD:

  1. In a fry pan, heat oil and fry onions for 5 minutes until soft and brown
  2. Add garlic for 2 minutes
  3. Stir in mushrooms and tomatoes and saute together for 4 minutes
  4. Crack the eggs on top and sprinkle salt and pepper if desired
  5. Cover with a tight fitting lid and allow to cook undisturbed for 10 minutes
  6. Remove from pan and sprinkle with Parlsey
