Mediterranean eggs
SERVES: 2
TIME TAKEN: 20 minutes
INGREDIENTS:
- 1/2 large red onion, halved and sliced
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/3 punnet cherry tomatoes, sliced in half
- 1/3 cup mushrooms, chopped
- 3 large eggs
- 1 sprig parsley
- Salt and pepper (optional)
METHOD:
- In a fry pan, heat oil and fry onions for 5 minutes until soft and brown
- Add garlic for 2 minutes
- Stir in mushrooms and tomatoes and saute together for 4 minutes
- Crack the eggs on top and sprinkle salt and pepper if desired
- Cover with a tight fitting lid and allow to cook undisturbed for 10 minutes
- Remove from pan and sprinkle with Parlsey
