Use leftover beef from last night’s dinner

INGREDIENTS:

  • 150 gms leftover beef
  • 1 cos lettuce, chopped
  • 25 gm Greek herbs e.g. dill, mint, oregano, parsley, finely chopped
  • 1 chopped tomato
  • 1 large chopped cucumber
  • a few olives and feta cheese (if desired but can be omitted)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

 

METHOD:

  1. Cut beef into slices or cubes
  2. Mix the meat with lettuce, tomato, cucumber and olives. Add feta cheese (if desired)
  3. Whisk lemon juice and olive oil together and drizzle over salad.
