Greek Salad with Beef

Use leftover beef from last night’s dinner
INGREDIENTS:
- 150 gms leftover beef
- 1 cos lettuce, chopped
- 25 gm Greek herbs e.g. dill, mint, oregano, parsley, finely chopped
- 1 chopped tomato
- 1 large chopped cucumber
- a few olives and feta cheese (if desired but can be omitted)
- 2 tbsp lemon juice
- 2 tbsp olive oil
METHOD:
- Cut beef into slices or cubes
- Mix the meat with lettuce, tomato, cucumber and olives. Add feta cheese (if desired)
- Whisk lemon juice and olive oil together and drizzle over salad.
