Garlic Beef Stir-Fry

INGREDIENTS:
- 2 cups brown rice, cooked
- 2 cloves garlic, finely grated
- 400 gms lean beef strips
- 2 medium carrots
- 2 broccoli heads
- 1/2 purple cabbage (if preferred, normal cabbage can be used)
- 1 -2 red chillies (optional)
- 1/2 cup soya sauce
- 2 tbsp water
- 1 tbsp brown sugar
- Olive oil for cooking
METHOD:
- Cook the 2 cups of brown rice as per instructions, if not cooked yet
- Finely grate the garlic and slice chilli if using
- In a bowl, combine beef, garlic and chilli. If you have time, let marinade in fridge for 15 minutes. If more time, leave overnight for maximum flavour
- Drizzle olive oil in large wok or frying pan and cook on high heat the beef strips for 3 minutes. Remove from wok or pan
- Add more olive oil and add zucchini, and snow peas with brown sugar, soy sauce and water. Cook for 2-3 minutes until sauce thickens, Stir regularly.
- Return beef strips to wok/pan and stir for a further 1 minute
- Serve immediately with brown rice
