Brown Rice Salad with Smoked Salmon

Brown rice salad

Time Taken: 10 minutes

Serves: 2

INGREDIENTS:

  • 1/2 cucumber
  • 1 red capsicum
  • 1 red onion, sliced
  • 2 tsp soya sauce
  • 2 cupsĀ  cooked brown rice or left over from night before
  • 2 tbsp finely chopped fresh flat-leaf parsley leaves
  • 6-8 grape or cherry tomatoes, halved
  • 60ml lemon juice
  • 100 gms smoked salmon

 

METHOD:

  1. Warm rice in microwave for 1-2 minutes
  2. Mix in onion, capsicum, tomatoes and soya sauce
  3. Decorate on top with cucumber and parsley
  4. Add lemon juice to rice salad and toss to combine.
  5. Add smoked salmon on top
  6. Serve immediately
