Brown Rice Salad with Smoked Salmon

INGREDIENTS:
- 1/2 cucumber
- 1 red capsicum
- 1 red onion, sliced
- 2 tsp soya sauce
- 2 cupsĀ cooked brown rice or left over from night before
- 2 tbsp finely chopped fresh flat-leaf parsley leaves
- 6-8 grape or cherry tomatoes, halved
- 60ml lemon juice
- 100 gms smoked salmon
METHOD:
- Warm rice in microwave for 1-2 minutes
- Mix in onion, capsicum, tomatoes and soya sauce
- Decorate on top with cucumber and parsley
- Add lemon juice to rice salad and toss to combine.
- Add smoked salmon on top
- Serve immediately
