Breakfast Mushroom and Spinach Stir-fry

A great way to start the day with a hit of vitamins and nutrients.
Serves: 2
Time taken: 10 minutes
Ingredients:
- 2 tbsp olive oil
- 6 button mushrooms, sliced
- 1/2 red or brown onion sliced
- 1 garlic clove, crushed
- 100gms or 3 handfuls of spinach
Method:
- heat olive oil in fry pan, Saute sliced mushrooms for 2-3 minutes, until lightly browned and soft. Set aside
- In same pan, add onion and saute until soft for 2 minutes
- Add garlic for 2 minutes then add mushrooms back
- Add a spinach and cook until just cooked and wilted
- Serve immediately
