Breakfast Mushroom and Spinach Stir-fry

Time taken: 10 minutes

Ingredients:

  • 2 tbsp olive oil
  • 6 button mushrooms, sliced
  • 1/2 red or brown onion sliced
  • 1 garlic clove, crushed
  • 100gms or 3 handfuls of spinach

Method:

  1. heat olive oil in fry pan, Saute sliced mushrooms for 2-3 minutes, until lightly browned and soft. Set aside
  2. In same pan, add onion and saute until soft for 2 minutes
  3. Add garlic for 2 minutes then add mushrooms back
  4. Add a spinach and cook until just cooked and wilted
  5. Serve immediately
