Avocado Egg Salad with tuna (or ham)

TIME TAKEN: 10 mins
INGREDIENTS:
- 2 hard boiled eggs
- 1 can of tuna in olive oil or 100gms of ham finely chopped
- 1 avocado, finely chopped
- 1 tbsp lemon juice
- 1 red onion, finely chopped
- 1 red capsicum, cut into strips
- 1 tbsp oil
- 1 carrot cut into strips
- 1 cucumber, cut into slicves
METHOD:
- Mix chopped avocado, tuna or ham, and lemon juice in a large bowl.
- Combine with other ingredients
- Serve immediately
