Zesty Pork with Greek Salad

Zesty Pork with Greek Salad

  • Healty LCHF meal. Pork stake with sallad including cucumber, tomato, avocado, onion. Plate on wood table.

(cook extra for lunch the next day)

 

INGREDIENTS:

  • 2 pork loins
  • 2 cloves of garlic
  • 1 tbsp oregano
  • 90ml olive oil
  • 1 tbsp  lemon juice
  • 2 tbsp oilve oil
  • 1 tsp sea salt
  • 1 cucumber
  • 1 tomato
  • 1/2 avocado
  • 1 red onion
  • 1/3 cup Greek Yogurt
  • 1 tsp garlic salt

METHOD:

  1. Lightly salt and pepper the pork loins and set aside.
  2. Mix lemon juice, garlic, olive oil and vinegar in a food processor. Marinade pork with sauce and refrigerate
  3. Chop the cucumber, tomato, avocado and onion into 1cm cubes
  4. Heat olive oil in a frying pan over medium heat and cook  pork. As one side cook, baste the other side with the remaining marinade.
  5.  Flip the pork over and cook for a few mins till meat is browned. (about 5 mins)
  6. Mix the yogurt with garlic salt. Add in salad cubes
  7. Serve pork immediately with salad
