Zesty Pork with Greek Salad

(cook extra for lunch the next day)
INGREDIENTS:
- 2 pork loins
- 2 cloves of garlic
- 1 tbsp oregano
- 90ml olive oil
- 1 tbsp lemon juice
- 2 tbsp oilve oil
- 1 tsp sea salt
- 1 cucumber
- 1 tomato
- 1/2 avocado
- 1 red onion
- 1/3 cup Greek Yogurt
- 1 tsp garlic salt
METHOD:
- Lightly salt and pepper the pork loins and set aside.
- Mix lemon juice, garlic, olive oil and vinegar in a food processor. Marinade pork with sauce and refrigerate
- Chop the cucumber, tomato, avocado and onion into 1cm cubes
- Heat olive oil in a frying pan over medium heat and cook pork. As one side cook, baste the other side with the remaining marinade.
- Flip the pork over and cook for a few mins till meat is browned. (about 5 mins)
- Mix the yogurt with garlic salt. Add in salad cubes
- Serve pork immediately with salad
